3 cups of fresh lilac blossoms that have not been treated with any pesticides (remove from stems)
3 cups of organic sugar
3 cups of water
Juice of one lemon
Place all of the ingredients in your saucepan and bring to a simmer over medium heat. Stir ingredients until all of the sugar is dissolved. Use a fork or the back of a spoon to smash the blueberries against the side of the pan to infuse their color into the syrup.
Allow the mixture to simmer for about fifteen minutes over medium heat and then remove the pan from the heat. Strain mixture through a fine mesh strainer or 2 layers of cheesecloth into a bowl and then ladle the syrup into sterilized glass preserving jars and place lids tightly on jars. Process the jars in a Bain Marie bath for ten minutes to seal the lids and preserve your syrup.
