DANDELION ORANGE MARMALADE

4 organic oranges

2 tsp of pectin

1 – 1 ½ cups of dandelion flowers petals—no green parts

2 ½ cups of organic sugar

2 cups of water

Peel the orange rind ensuring that you do not remove the pith as well.  Chop up the orange rind and add it to a deep pot.  Peel the white pith from the oranges and discard.  Chop up the oranges into small pieces and add to the pot with the orange rind.

Mix ½ cup of the sugar with your pectin. 

Add water and sugar and pectin/sugar mix to the pot, bring mixture to a boil (constantly stirring) and allow to simmer for about 20 minutes.

Add the dandelion petals and continue to simmer and stir for five additional minutes.

Remove pot and ladle the marmalade into sterilized jars and then process the jars in a Bain Marie bath for ten minutes.

Voila!  You have now made dandelion orange marmalade which can be enjoyed all year round but especially during those cold, dark winter months when just looking a jar of this golden marmalade will make you think of the warm summer sun and those magical bright dandelions!  Enjoy!
